Final report of the priority action A-702-21

The aim of the focus action was to determine the microbiological status of starch-containing food from old people's and nursing homes, hospitals, kindergartens, residential homes, etc. The samples received were from hot storage and also from refrigerated storage. The samples received included dishes that had been kept warm as well as those that were found refrigerated.

130 samples from all over Austria were examined. Five samples were rejected:

  • Three samples had slightly elevated microbiological levels of Enterobacteriaceae, mesophilic aerobic bacteria and Escherichia coli, and were therefore judged to be of impaired value.
  • One sample was judged unsuitable for human consumption/intended use because the bacterial content of Bacillus cereus was very high.
  • One sample did not comply with the Hygiene Ordinance because a very high aerobic plate count and an elevated level of coagulase-positive staphylococci were detected.
