Microbiology and sugar content of milk products for schools and kindergartens

Final report of the priority action A-051-18

The focus action was used to determine whether the hygiene criteria are being met in the manufacturing plants and what the current level of added sugar in school milk is.

48 samples from all over Austria were examined. Five samples were rejected:

  • All five objections were due to elevated levels of bacteria of the genus Enterobacteriaceae.

The mean content of added sugar in the milk mix products was 3.7%. Milk products for the school milk campaign are often produced by regional farms. Ongoing verification of farm hygiene practices by official control is therefore required. A maximum of 6.5% sugar or honey may be added to the permitted maximum added sugar in dairy products promoted under this campaign in the 2018/2019 school year. Further reductions to a maximum addition of 3.5% or 5.5% sugar by the 2022/2023 school year are planned.
