Ingredients (4 portions):
- 1 head of red cabbage
- 250 g firm goat's cheese
- 3 tbsp dark vinegar (balsamic vinegar)
- 6 tbsp rapeseed oil
- 2 tbsp honey
- 1 clove of garlic
- thyme
- 1 tbsp mustard
- salt, pepper
- 30 g walnuts
Preparation:
For the marinade, mix together the vinegar, chopped garlic, oil, mustard and honey. Preheat the oven to 160 °C (fan oven). Cut the red cabbage into slices about 1 cm thick. Place the red cabbage slices on a baking tray lined with baking paper. Brush the slices evenly with half of the marinade, season with salt, pepper and thyme and crumble the goat's cheese on top. Bake the red cabbage steaks for approx. 25-30 minutes in the centre of the oven. Toast the chopped walnuts in a pan and sprinkle over the finished steaks. Serve with the remaining dressing.
Tips:
- Serve with a green salad and vegetable puree.
- The red cabbage (with the stalk) can also be marinated in a herb and garlic marinade a few hours beforehand to add even more flavour to the palate.
