Final Report of Priority Action A-700-21

The aim of the focus action was to determine the suitability for human consumption (sensory and microbiological examination) of home-produced food. In the microbiological parameters, pathogenic germs (Bacillus cereus, Salmonella, Listeria monocytogenes) were examined in addition to spoilage and hygiene indicator germs (mesophilic aerobic germs, Enterobacteriaceae, Escherichia coli, coagulase-positive Staphylococci, Pseudomonads). In the case of packaged goods, the labeling was also checked.

1,296 samples from all over Austria were examined. 100 samples were rejected:

  • Three samples were judged to be harmful to health and therefore unsafe: one sample due to contamination with Listeria monocytogenes and two samples had extremely high levels of germs from presumptive Bacillus cereus.
  • 17 samples were judged unfit for human consumption due to very high levels of germs from hygiene indicators or spoilage bacteria. In addition, the sensory evaluation of one sample did not meet the requirements.
  • In 20 samples, the content of Enterobacteriaceae, mesophilic aerobic germs and pseudomonads was slightly elevated, and slight sensory deficiencies (minimal deviations in the appearance of the samples) were also detectable. Therefore, these samples were assessed as impaired in value.
  • In eight samples, a hygiene violation was pronounced due to deviations from storage temperatures during storage (non-compliance with storage temperatures during sampling). In one sample, the microbial content directly after production was too high.
  • The inspection of compliance with the Allergen Information Ordinance resulted in a complaint for three samples.
  • In the case of prepackaged goods, labeling deficiencies were found in a total of 49 samples.
