Final report of the priority action A-704-21

The aim of the focus action was the survey of the microbiological status of self-produced food from Buschenschanken, Heurigen and Jausenstationen. The microbiological parameters examined included spoilage and hygiene indicator germs (mesophilic aerobic germs, Enterobacteriaceae, Escherichia coli, coagulase-positive Staphylococci) and pathogenic germs (Bacillus cereus, Salmonella, Listeria monocytogenes).

73 samples from all over Austria were examined. Seven samples were rejected:

  • Three samples were judged unsuitable for human consumption due to very high levels of germs from hygiene indicators or spoilage germs. One sample was found to have negative sensory indicators.
  • Four samples had elevated levels of Enterobacteriaceae, mesophilic germs and pseudomonads and were therefore judged to be of impaired value.
