The aim of the focus action was to check compliance with the legal requirements on the composition, dosage, documentation and labeling of smoke flavorings and smoke flavoring mixtures used in Austria. Smoke flavorings are used in the production of meat, fish, cheese, snacks and BBQ sauces to give them a smoked flavor. Twenty samples from across Austria were tested.

Smoke flavorings are obtained by fractionation and purification of condensed smoke. In order to be able to guarantee the safety and harmlessness to health of smoke flavorings, they must be tested for safety and approved before they are used in food. Maximum amounts are specified for use in foods.
