Ingredients
1 onion
3 cloves of garlic
1 large potato
1 cup of sour cream
100 g dried white beans
1 litre of soup
Salt, pepper
Marjoram
Preparation
Pour cold water over the beans in a pan, cover and leave to soak overnight in the fridge. The next day, strain the beans, rinse well and boil with fresh water for approx. 30 minutes.
Sauté the onion and garlic briefly in a little oil, add the peeled and diced potato, salt, pepper and plenty of marjoram. Pour in the soup and cook until soft, puree with a hand blender. Add the cream and some of the cooked white beans and blend again vigorously to the desired consistency. Flavour with salt, pepper and marjoram and add the remaining beans.
Tips:
- Serve with fresh bread as a main course.
- Instead of fresh beans, you can also use a ½ tin of white beans.
- For a savoury variation, add sliced bacon, smoked meat or Frankfurter sausages.
