The aim of the focus action was to examine dishes from communal catering that make specific reference to a certain animal species in their name.

41 samples from all over Austria were examined. The majority of the samples were dishes with fish and seafood as an ingredient. One single sample was a game dish (= deer stew).

  • Three samples were objected to because the analytically verified animal species did not match the declared one.

Microbiologically, not a single submitted dish was objected to.
