Ingredients
200 g Okara
150 g tofu
150 g fine rolled oats or oat flour
4 carrots
50 g sunflower seeds
3 cloves of garlic
Salt
Pepper
Marjoram
To thicken:
5 tbsp cornflour
8 tbsp water
To taste:
Paprika powder
Tomato paste
Preparation
Mix the cornflour with water until smooth. Mix the remaining ingredients and finally stir in the mixture of cornflour and water. Flavour with spices, adding more spices of your choice if necessary. If the mixture is not compact enough, add a little more water and stir until well combined.
Heat a little oil in a pan. Shape the mixture into patties approx. 5 cm in diameter and fry on both sides in the hot oil. Serve with a green salad and herb dip.
Please note: Okara must be heated through for approx. 20 minutes before eating. It is best to heat the suspension of crushed soya beans for at least 20 minutes when making the soya drink.
Tips
- Varying the spices and herbs added gives the vegan okra loaf different flavours.
- Seasonal vegetables such as courgettes, broccoli, cauliflower or peppers can also be used for the patties if desired.
- For juicier patties, soak oat flakes in 1/8 litre of water before use.
- For a vegetarian variation, 100 g of cheese (Gouda or mountain cheese) can be added.
