Microbiology of sushi and fish sandwiches to go

Final report of the priority action A-703-22

The aim of the focus action was to survey the microbiological status of products containing fish products. In addition to spoilage and hygiene indicator germs such as pseudomonads, Escherichia coli and coagulase-positive staphylococci, pathogenic germs such as Bacillus cereus, Salmonella and Listeria monocytogenes were also examined.

45 samples from all over Austria were examined. Two samples were rejected:

  • One sample was assessed as impaired in value (microbiology).
  • One sample was rejected as unsuitable for human consumption/intended use (microbiology).
